A native of Montreal, [Executive Chef] Eric Bechard … [has learned] that the best products didn’t have to be the most expensive when they are produced locally. As the chef at the Oyster Bar, Eric marries philosophies of high-end food and wine pairings with sourcing ingredients from local farmers, fisherman and ranchers with a personal style he refers to as Progressive American.
