Chef Pascal and his kitchen brigade balance the pristine execution of classical French technique with unexpected textures, flavors and ingredients to deliver a distinct take on Modern European cuisine. Why Modern European rather than Modern French? Because Chureau expands his cooking to include a wide range of classical inspirations, executed with unexpected ingredients and surprising contrasts. Old world techniques and dishes from France, Spain, Italy, Portugal and all of Europe influence his cuisine style — while also serving as points of artistic departure.

With the Lucier menu, Chef Pascal aims to offer inventive, contemporary cuisine while honoring the past. It’s a deliberate, graceful collision of old and new traditions on a plate — American ingenuity and curiosity uncovering new combinations, with tradition and technique dominating the cooking methods. The common denominator: exceptional quality, whether it’s fresh Oregon produce, Kobe beef or exotic European truffles.
